Almond Pudding with Warm Curd Dressing

4 eggs 175g caster sugar
teaspoon baking powder
175g ground almonds
Farmhouse Preserves Original Lemon or Lime Curd
Fresh Raspberries and cream to dress.

Preheat oven to 180C. Whisk eggs and sugar together for 6-8mins to a consistency similar to lightly whipped cream. Add the baking powder to the ground almonds, rubbing between your thumb and forefinger to a smooth texture. Add a tablespoonful of Lemon Curd to the whisked mix, followed by the almonds. Whisk slowly for one minute to take out the air. Spoon into buttered moulds and bake for 30-35 minutes. When cool dress with warm lemon or lime curd, whipped cream, and raspberries.
